Ingredients:

Gluten-Free, Vegan, Serves 4

  • 8 slices of gluten-free bread
  • 1 cup fresh basil leaves
  • 2 large tomatoes, thinly sliced
  • 1 cup dairy-free mozzarella cheese, sliced
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions:

Preheat a grill pan or sandwich press over medium heat. Drizzle olive oil over one side of each slice of gluten-free bread. Place the bread slices, oiled side down, on a clean surface. Layer the dairy-free mozzarella cheese slices on half of the bread slices. Top the cheese with sliced tomatoes, followed by fresh basil leaves.
