For the black tea:

Gluten-Free, Vegan, Serves 4

  • 4 Tbsp black tea
  • 3 Tbsp Stinging Nettle Leaves
  • 2 Tbsp Raspberry Leaf Leaves
  • 4 cups water

For the coconut milk foam:

  • 1 can (13.5 oz) full-fat coconut milk, refrigerated
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon maple syrup

Directions:

Bring 4 cups of water to a boil in a saucepan. Once boiling, remove from heat and add the tea mixture. Let steep for 3-5 minutes, depending on your desired strength. While the tea is steeping, carefully open the refrigerated can of coconut milk without shaking it. Scoop out the thick coconut cream that has risen to the top and place it in a mixing bowl. Save the remaining coconut water for another use.

If using, add maple syrup and vanilla extract to the coconut cream. Wash the coconut cream with a hand mixer or immersion blender until it becomes thick and frothy. Once the tea has steeped, remove the tea bags and divide the tea evenly among four cups. Spoon the whipped coconut milk foam on top of each cup of tea.
