Perfectly Peachy!
Peaches make a great addition to anyone’s diet. Their season starts in May and goes right on through to summer. Peaches’ high vitamin E and vitamin C content which makes them great for boosting the immune system naturally. Not to mention that the vitamin E and C is also great for skin and eye health. Peaches are high in potassium which prevents dehydration and cramping while increasing bone health. They are high in fiber making them great for digestion. Peaches help improve heart, liver, and kidney function. They can help control high cholesterol, regulate blood pressure, and prevent anemia.
Power House
Peaches are high in magnesium and vitamin B which helps with mood and energy levels. They also contain antioxidants and anti-inflammatories which can help slow the signs of aging, detox, and promote natural pain relief. There is definitely power in the peach! One of the best things about peaches is the taste. Don’t believe me get ready to be converted. Try out this seasonal peach salad. Your taste buds will thank you.
Grilled Peach Salad
Gluten Free Serves 4
- 1 Avocado
- 4 Cups Spinach
- 2 Cups Arugula
- ½ Cup Walnuts
- 2 Tablespoons Avocado Oil
- ½ teaspoon Dijon Mustard
- 2 Large Peaches
- ½ teaspoon Raw Honey (Local great for Allergy Prevention)
- 3 Tablespoons Balsamic Vinegar
- ½ teaspoon Lemon Juice
- Non stick cooking spray
Directions:
On the Barbecue grill peaches (cut in half and pitted) I spray them with Coconut oil before I put them on it makes them easier to get off. Grill for 1-2 minutes and turn peach halfway for another 1-2 minutes and remove. Let cool. While waiting combine spinach and arugula in a large bowl. In a separate small bowl combine vinegar, oil, honey, mustard, and lemon juice mix well and set aside. Slice avocado and peaches. Put on top of salad and add nuts and dressing. Lightly toss and enjoy. This light and refreshing salad is great for those hot days that are on their way. It is a great way to insure you are getting the proper nutrients to get the most out of everyday.
