Blueberry Lemon Poppy Seed Scones

Gluten-Free, Vegan, Serves 10

  • 2 cups gluten-free all-purpose flour
  • 1/2 cup almond flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon lemon zest
  • 1/2 cup vegan butter, chilled and cut into small pieces
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon salt
  • 1 tablespoon poppy seeds
  • 1/2 cup fresh blueberries
  • 2 tablespoons non-dairy milk, for brushing
  • 1/2 cup non-dairy milk
  • 2 tablespoons granulated sugar, for sprinkling
Directions:

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Whisk together the gluten-free all-purpose flour, almond flour, granulated sugar, baking powder, baking soda, and salt in a large mixing bowl. Add the chilled vegan butter to the dry ingredients and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs. Stir in the non-dairy milk, lemon juice, lemon zest, and poppy seeds until a shaggy dough forms. Gently fold in the fresh blueberries.

Turn the dough onto a lightly floured surface and pat it into a circle about 1 inch thick. Use a sharp knife or a biscuit cutter to cut the dough into ten equal-sized wedges. Place the scones onto the prepared baking sheet, leaving about 2 inches between each. Brush the tops of the scones with non-dairy milk and sprinkle with granulated sugar. Bake the blueberry lemon poppy seed snacks for 15-20 minutes or until they are lightly golden brown on top and cooked through.   • 1 medium beet, peeled and chopped
  • 1 cup frozen mixed berries
  • 1 ripe banana
  • 1 cup unsweetened almond milk
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup (optional)
  • Ice cubes
Directions:

Add the chopped beet, frozen mixed berries, banana, unsweetened almond milk, chia seeds, and maple syrup (if using) to a blender. Add a handful of ice cubes to the blender to help thicken the smoothie and create a more refreshing texture. Blend on high speed for 1-2 minutes or until the mixture is smooth and creamy. Taste the smoothie and adjust the sweetness, if needed, by adding more maple syrup or another sweetener.

Lemon Butter Ricotta Zucchini Pasta

Gluten-Free, Vegan, Serves 4

  • 8 oz gluten-free spaghetti pasta
  • 1 medium zucchini, spiralized
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/4 cup vegan butter
  • 1/2 cup vegan ricotta cheese
  • 1 lemon, zested and juiced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
Directions:

Cook the gluten-free spaghetti pasta according to the package instructions. Drain and set aside. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the spiralized zucchini to the skillet and sauté for 2-3 minutes until slightly softened. Season with salt and pepper to taste.

In a small saucepan, melt the vegan butter over low heat. Add the vegan ricotta cheese, lemon zest, and lemon juice. Stir well to combine. Add the cooked gluten-free spaghetti pasta to the skillet with the zucchini and toss well to combine. Pour the lemon butter ricotta sauce over the pasta and toss until everything is well coated. Remove from heat and sprinkle with chopped parsley.

Grilled Corn Zucchini Salad

Gluten-Free, Vegan, Serves 6

  • 3 ears of corn, husked
  • 2 medium-sized zucchinis
  • 1 red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1 small red onion
  • 1/4 cup olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey (or maple syrup for a vegan option)
  • Salt and pepper to taste
Directions:

Preheat the grill to medium-high heat. Cut the zucchini into slices that are approximately 1/4 inch thick. Cut the red bell pepper into strips and the red onion into thin slices. Brush the zucchini slices, red bell pepper strips, and red onion slices with olive oil and season with salt and pepper. Grill the corn, zucchini, red bell pepper, and red onion until tender and slightly charred, about 5-7 minutes for the corn and 3-4 minutes for the vegetables. Rotate the corn occasionally to make sure all sides are grilled evenly.

Remove the vegetables from the grill and let them cool to room temperature. Cut the corn kernels off the cob and transfer them to a large bowl. Add the grilled zucchini, red bell pepper, and red onion to the bowl with the corn. Whisk together the olive oil, lime juice, honey (or maple syrup), and cilantro in a separate bowl. Pour the dressing over the vegetables and toss to combine. Season with additional salt and pepper to taste. Chill the salad in the refrigerator for at least 30 minutes before serving.
