Gluten-Free, Vegan, Serves 4
- 1 red onion minced
- 2 garlic cloves minced
- 5 cups frozen peas
- 2 Tbsp thai green curry paste
- 1 3/4 cup water
- 2 cups full fat coconut milk
- 1 lime juice and zest
- 2 jalapeno chillies seeded and minced
- 1 Tbsp olive oil
Toppings:
- Fresh coriander
- Shredded coconut flakes
- Chili peppers
- Vegan Sour cream
Directions:
Saute the onions and garlic in oil until soft. Add the peas, curry paste, coconut milk, jalapeno, and water. Bring to a gentle simmer and cook for 5 minutes or until hot. Top with condiments of choice and enjoy.
