Gluten-Free, Vegan, Serves 12
- 4 cups fresh strawberries, sliced
- 2 medium cucumbers, sliced
- Juice of 6 limes
- 1/4 cup fresh mint leaves
- 6 cups cold water
- Ice cubes, for serving
- Additional mint leaves and lime slices, for garnish
Directions:
Wash and prepare the strawberries, cucumbers, limes, and mint leaves as needed. Combine the sliced strawberries, sliced cucumbers, lime juice, and fresh mint leaves in a blender. Add half of the cold water and blend until smooth. If you prefer a smoother texture, you can strain the mixture through a fine mesh sieve or cheesecloth to remove any pulp. Transfer the strained mixture to a large pitcher or container. Stir in the remaining cold water and mix well to combine. Place the pitcher in the refrigerator to chill for at least 30 minutes to allow the flavors to meld together. When ready to serve, fill glasses with ice cubes. Pour the chilled Strawberry Cucumber Lime Mint Refresher into each glass. Garnish with additional mint leaves and lime slices if desired.
