Ingredients:

Gluten-Free, Vegan, Serves 6

  • 1 tablespoon coconut oil
  • Salt and pepper, to taste
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons yellow curry paste
  • 1 cup vegetable broth
  • 14 oz can coconut milk
  • 1 cup dried red lentils, rinsed, drained
  • 2 medium carrots, sliced
  • 1 medium potato, diced
  • Fresh cilantro, chopped
  • 1 cup cauliflower florets
  • Cooked rice or quinoa, for serving
  • 1 cup spinach leaves

Directions:

Heat coconut oil in a large pot over medium heat. Add the diced onion and cook until softened about 5 minutes. Add minced garlic and grated ginger to the pot, and cook for another 1-2 minutes until fragrant. Stir in the yellow curry paste and cook for 1 minute to release its flavor.
