For the Honey Cake Layers:
- 2 cups gluten-free flour blend
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup coconut oil, melted
- 2 teaspoons vanilla extract
- 1/2 cup maple syrup
- 1/4 cup almond milk
For the Cashew Cream Filling:
- 2 cups raw cashews, soaked
- 1/4 cup almond milk
- 1/2 cup coconut cream
- 1/4 cup maple syrup
- 2 teaspoons lemon juice
- 1 teaspoon vanilla extract
For the Honey Syrup:
- 1/2 cup maple syrup
- 1/4 cup water
Directions:
Preheat the oven to 350°F (175°C). Line two 8-inch round cake pans with parchment paper and lightly grease the sides. Whisk together the gluten-free flour blend, baking powder, baking soda, and salt in a large bowl. Mix the melted coconut oil, maple syrup, almond milk, and vanilla extract in a separate bowl. Add the wet ingredients to the dry ingredients and stir until well combined.
Divide the batter equally between the prepared cake pans and smooth the tops. Bake in the preheated oven for about 15-20 minutes or until a toothpick inserted into the center comes out clean. Remove the cake layers from the oven and let them cool completely. Repeat the process of brushing with honey syrup and spreading with cashew cream for each layer until all layers are used. Refrigerate the assembled cake for at least 2 hours to allow the flavors to meld and the cake to set. Before serving, you can dust the top of the cake with a sprinkle of cocoa powder or drizzle with extra honey syrup.
