Ingredients:
For the tart crust:
- 1 1/2 cups almond flour
- 1/4 cup coconut oil, melted
- 2 tablespoons maple syrup
- Pinch of salt
For the berry filling:
- 2 cups mixed red berries
- 1/4 cup maple syrup
- 2 tablespoons chia seeds
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
For the topping:
- Additional mixed red berries for garnish
Directions:
Preheat your oven to 350°F (175°C). Combine almond flour, melted coconut oil, maple syrup, and a pinch of salt in a mixing bowl. Mix until well combined and the mixture resembles coarse crumbs. Press the mixture into the bottom and up the sides of a 9-inch tart pan to form the crust. Bake the crust in the preheated oven for 10-12 minutes or until lightly golden brown. Remove from the oven and let it cool completely. Combine the mixed red berries, maple syrup, chia seeds, lemon juice, and vanilla extract in a saucepan.
Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens about 10-15 minutes. Remove from heat and let the filling cool slightly. Once the crust has cooled, pour the berry filling into the crust and spread it out evenly. Arrange additional mixed red berries on top of the filling for garnish. Place the tart in the refrigerator to chill for at least 1-2 hours or until the filling is set.
