Ingredients:

Gluten-Free, Vegan, Serves 4

  • 1 cup dry brown lentils
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 14 oz can crushed tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/2 teaspoon smoked paprika
  • 1 carrot, grated
  • 4 gluten-free hamburger buns
  • 1 tablespoon tomato paste
  • 2 tablespoons maple syrup
  • 1 tablespoon coconut amino
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste
  • 1 teaspoon chili powder
  • Optional toppings: sliced avocado, chopped cilantro, sliced jalapeños

Directions:

Rinse the lentils under cold water and drain them. Combine the lentils and vegetable broth in a medium saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the lentils are tender and most of the liquid is absorbed. Drain any excess liquid and set aside. In a large skillet, heat the olive oil over medium heat.

Add the diced onion and cook until softened about 5 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant. Add the diced red bell pepper and grated carrot to the skillet. Cook for about 5 minutes, until the vegetables are softened. Stir in the tomato paste and cook for 1 minute, stirring constantly.

Add the cooked lentils, crushed tomatoes, maple syrup, coconut amino, apple cider vinegar, chili powder, smoked paprika, salt, and pepper to the skillet. Stir well to combine. Reduce the heat to low and let the mixture simmer for about 10-15 minutes, stirring occasionally, until it thickens and flavors meld together. While the mixture is simmering, lightly toast the gluten-free hamburger buns or sandwich bread if desired.

Once the lentil sloppy joe mixture is ready, spoon it onto the bottom halves of the hamburger buns or sandwich bread. Top with optional toppings such as sliced avocado, chopped cilantro, or sliced jalapeños if desired. Place the top halves of the buns or bread on top.
