Gluten-Free, Vegan, Serves 8
- 2 large ripe Mangos
- 1 ⅔ cup Coconut Cream chilled
- ⅓ cup Powdered Stevia Monk Fruit Sugar
- ½ tsp Pure Vanilla
- 1 tsp Agar agar powder
- 2-3 Tbsp Coconut Milk warm
Directions:
Chop and puree the mangoes. Add 1 tsp agar agar powder in a bowl with 2-3 Tbsp of warm coconut milk. Stir well until dissolved (about 1-2 minutes). Heat mixture in the microwave for 1 minute and stir well. In a large bowl, add cold cream and whip with a mixer for 2 minutes. Add in vanilla and powdered sugar, whip for another 9-10 minutes or until peaks form. Next, add in the cooled agar mixture and whip for another minute. Gently fold in the mango puree until incorporated. Pour the mixture into your serving dishes and chill for at least 4 hours. Top with coconut whipped cream and fresh fruit of your choice (pistachios are a great choice too).
