- 2 medium carrots, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (14 oz) coconut milk

- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- Salt and pepper, to taste
- Fresh cilantro, chopped
- Coconut yogurt
Directions:
Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until softened about 5 minutes. Add the minced garlic, ground cumin, ground coriander, and ground turmeric to the pot. Cook for an additional 1 minute until fragrant. Add the diced beets and carrots to the pot and stir to coat with the spices. Cook for 5 minutes, stirring occasionally.
