Ingredients:
- 1 Tbs coconut oil
- 1 medium onion diced
- 2 medium carrots diced
- 5 cloves of garlic minced
- 6 cups vegetable stock
- 1 1/2 cup red lentils
- 1 cup sweet corn
- 2 tsp ground cumin
- 1 tsp curry powder
- Pinch of cayenne powder
- Zest and juice of 1 small lemon
- 1 medium sweet potato diced
Directions:
Heat oil, onions, sweet potatoes, ad carrots for 5 minutes. Stir occasionally until onions are translucent. Add garlic and sauté for 1 more minute. Stir in vegetable stock, lentils, corn, cumin, curry, cayenne until combined. Continue cooking until soup reaches a simmer, Cover and cook for 15 min stirring occasionally until lentils are tender. Prue soup until it reaches your desired consistency. Try doing the puree in batches, because to liquid expands. Return soup to a pot, stir in lemon zest and juice until combined. Add salt and pepper to taste. Enjoy!
