Ingredients:

Gluten-Free, Vegan, Serves 12

For the crust:

  • 2 cups almond flour
  • 1/4 cup coconut oil, melted
  • 2 tablespoons maple syrup
  • Pinch of salt

For the Pecan filling:

  • 1 1/2 cups pecan halves
  • 1/2 cup almond milk
  • 1 cup Medjool dates, pitted
  • 1/4 cup coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Directions:

Preheat your oven to 350°F (175°C). Combine the almond flour, melted coconut oil, maple syrup, and a pinch of salt in a mixing bowl. Mix until well combined and a dough forms. Press the dough evenly into the bottom and up the sides of a 9-inch pie dish. Use your fingers or the back of a spoon to smooth out the crust.
