Artichokes have a number of health benefits that make them an ideal choice for your seasonal menu. They are high in fiber which is great for digestion, weight management, and diabetes regulation. Artichokes are a great source of iron making them ideal for preventing anemia and fatigue. They can help lower cholesterol, reduce blood pressure, and reduce risk for cardiovascular disease.

One of my favorite qualities about artichokes is their ability to help treat leaky gut by supporting healthy bacterial growthing in your digestive tract and their detoxifying properties. Now that you have a new found love and admiration for the artichoke we will show you just how easy it is to eat them.
Roasted Artichokes
Gluten Free Vegan Serves 4
- 3 Artichokes Fresh
- 6 Garlic Cloves
- 2 Large Lemons
- ½ tsp Sea Salt
- 1 Tbsp Vegan Butter
- ½ tsp Cracked Black Pepper
- 1 Tbsp Avocado Oil
- 6 Sprigs of Fresh Thyme
Directions:
Trim artichokes and cut in half. With a spoon remove the choke of artichoke. Rub with lemon wedge on all sides. Melt butter and combine with avocado oil. Lightly brush artichokes with mixture (you don’t want to use a lot the remaining portion will be used for the dipping sauce). Place artichokes into a baking dish cut side up. Add garlic and thyme sprig to center of artichoke. Roast uncovered for 10 minutes at 375 degrees fahrenheit. Cover loosely with foil and roast until tender. Once roasted drizzle lemon juice lightly over. Add any remaining lemon juice to remaining oil and ghee dipping sauce. This is a light and refreshing side dish or snack that will have you craving more.
