Ingredients:

For the layered nougat:

  • 1 cup raw cashews, soaked overnight
  • 1/4 cup coconut flour
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

For the layered caramel:

  • 1 cup Medjool dates, pitted soaked
  • 2 tablespoons almond butter
  • 2 tablespoons coconut oil, melted
  • 1/4 cup coconut milk
  • Pinch of sea salt

For the chocolate coating:

  • 1 cup dairy-free dark chocolate chips
  • 1 tablespoon coconut oil

For garnish:

  • Crushed peanuts or almonds
  • Flaky sea salt

Directions:

Prepare the nougat layer: Drain the soaked cashews and add them to a food processor along with the coconut flour, maple syrup, vanilla extract, and a pinch of sea salt. Process until smooth and creamy, scraping down the sides of the bowl as needed. Line a square baking dish with parchment paper, leaving some overhang on the sides for easy removal. Transfer the nougat mixture to the lined dish and spread it out evenly with a spatula. Place the dish in the freezer to set while you prepare the caramel layer. Prepare the caramel layer: Drain the soaked dates and add them to a blender or food processor along with the almond butter, melted coconut oil, coconut milk, and a pinch of sea salt. Blend until smooth and creamy, scraping down the sides of the blender as needed. Remove the baking dish from the freezer and spread the caramel layer evenly over the nougat layer.

Return the dish to the freezer to set while you prepare the chocolate coating. Combine the dairy-free dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth. Remove the baking dish from the freezer and carefully lift the layered mixture out of the dish using the parchment paper overhang. Cut it into small rectangular bars. Dip each bar into the melted chocolate, using a fork to coat it fully. Place the coated bars on a parchment-lined baking sheet. If desired, sprinkle crushed peanuts or almonds and flaky sea salt over the top of each bar for garnish. Place the baking sheet in the refrigerator to allow the chocolate to set for at least 30 minutes.
