Ingredients:
- 1 cup gluten-free rolled oats
- 1 ripe mango, diced
- 1 cup unsweetened almond milk
- 2 tablespoons chia seeds
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Pinch of salt
- Optional toppings: sliced banana, shredded coconut, chopped nuts, additional diced mango
Directions:
In a mixing bowl or airtight container, combine the rolled oats, diced mango, chia seeds, almond milk, maple syrup, vanilla extract, cinnamon, and a pinch of salt. Stir well to combine. Cover the bowl or container and place it in the refrigerator overnight, or for at least 4 hours, to allow the oats to soak and soften. In the morning, give the overnight oats a good stir.
