For the Pumpkin Salad:

  • 1 small pumpkin, peeled, seeded, diced
  • 2tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 15 oz can garbanzo beans, rinsed
  • 1 cup sliced cucumber
  • 6 cups fresh spinach leaves
  • 1/2 cup sliced red onion
  • 1 cup marinated mushrooms

For the Marinated Mushrooms:

  • 2 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried thyme
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the Honey Mustard Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Maple syrup

Directions:

Preheat the oven to 400°F (200°C). Toss the diced pumpkin with olive oil, salt, and pepper. Spread out on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes or until tender and lightly browned. While the pumpkin is roasting, prepare the marinated mushrooms.

Whisk together olive oil, balsamic vinegar, minced garlic, dried thyme, salt, and pepper in a bowl. Add the sliced mushrooms and toss to coat. Let marinate for at least 15 minutes. Combine the roasted pumpkin, garbanzo beans, spinach leaves, cherry tomatoes, sliced cucumber, sliced red onion, and marinated mushrooms in a large salad bowl.

In a small jar, combine the ingredients for the honey mustard dressing: olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and pepper. Shake well to emulsify. Drizzle the honey mustard dressing over the salad and toss gently to coat.
