Ingredients:

  • 1 (25 oz) package vegan gluten-free ravioli
  • 2 cups marinara sauce
  • 1 cup vegan shredded mozzarella cheese
  • 1 cup baby spinach leaves
  • 1/4 cup chopped fresh basil
  • Salt and pepper, to taste
  • Olive oil, for greasing

Directions:

Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil and set aside. Cook the vegan, gluten-free ravioli according to the package instructions. Drain and set aside. Combine the cooked ravioli, marinara sauce, baby spinach leaves, chopped basil, salt, and pepper in a large mixing bowl. Toss until the ravioli are evenly coated with the sauce and the spinach leaves are well distributed. Transfer half of the ravioli mixture to the prepared baking dish, spreading it out evenly. Sprinkle half of the vegan shredded mozzarella cheese over the ravioli layer.

Repeat with the remaining ravioli mixture and vegan shredded mozzarella cheese, creating another layer. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
