Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 sweet potato, peeled and diced
  • 1 small pumpkin, peeled, seeded, and diced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper, to taste
  • 1/2 cup coconut milk (from a can, full-fat)
  • Fresh parsley or cilantro, chopped, for garnish

Directions:

In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened about 5 minutes. Add the minced garlic to the pot and cook for an additional minute until fragrant. Add the diced carrots, celery, sweet potato, and pumpkin to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften. Pour the vegetable broth into the pot and bring to a simmer. Cover and cook for 15-20 minutes or until all the vegetables are tender. Once the vegetables are cooked, remove the pot from the heat.

Using an immersion blender or a regular blender, puree the soup until smooth. Stir in the ground cumin, cinnamon, nutmeg, salt, and pepper. Taste and adjust seasoning as needed. Stir in the coconut milk until well combined. If the soup is too thick, you can add more vegetable broth or coconut milk to reach your desired consistency. Return the pot to the heat and simmer for an additional 5 minutes to heat through. Serve hot autumn vegetable pumpkin soup garnished with chopped fresh parsley or cilantro.
