For the crust:
- 1 1/2 cups almond flour
- 1/4 cup coconut oil, melted
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- Pinch of salt
For the pie filling:
- 1 cup almond milk
- 1/2 cup coconut sugar
- 1/4 cup cornstarch
- 1/2 cup almond flour
- 1/4 cup vegan butter, melted
- 1 teaspoon almond extract
- Sliced almonds for garnish
Directions:
Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish and set aside. Combine the almond flour, melted coconut oil, maple syrup, vanilla extract, and a pinch of salt in a mixing bowl.
