For the cookies:
- 1/4 cup coconut flour
- 2 cups almond flour
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 cup maple syrup
- Pinch of salt
For the strawberry filling:
- 1 cup strawberries, frozen
- 2 tablespoons chia seeds
- 1/2 teaspoon vanilla extract
- 2 tablespoons maple syrup
Directions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside. In a large mixing bowl, combine the almond flour, coconut flour, melted coconut oil, maple syrup, vanilla extract, and a pinch of salt. Mix until a dough forms. If the dough is too crumbly, you can add a little more melted coconut oil. Roll out the dough between two sheets of parchment paper to about 1/4 inch thickness.
Use a cookie cutter to cut out an even number of cookie shapes. For half of the cookies, use a smaller cookie cutter to cut out a small shape in the center. Carefully transfer the cookies to the prepared baking sheet and bake in the preheated oven for 10-12 minutes or until golden brown around the edges. Remove from the oven and let cool completely. While the cookies are cooling, prepare the filling. Combine the chopped strawberries, chia seeds, maple syrup, and vanilla extract in a small saucepan.
Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens, about 5-7 minutes. Remove from heat and let cool, then blend smoothly. Once the cookies and filling are completely cooled, spread a thin layer of the strawberry filling onto the bottom cookies. Place the top cookies over the filling to create sandwiches.
