Ingredients:
Gluten-Free, Vegan, Serves 4
For the fig flatbread:
- 4 gluten-free flatbreads or naan breads
- 1 tablespoon olive oil
- 1/2 cup vegan feta cheese, crumbled
- 4-6 fresh figs, sliced
- 2 cups arugula
For the balsamic glaze:
- 1/4 cup balsamic vinegar
- 1 tablespoon maple syrup
Directions:
Preheat your oven to 375°F (190°C). In a small saucepan, combine the balsamic vinegar and maple syrup. Bring to a simmer over medium heat, then reduce the heat to low and let it cook for about 5-7 minutes or until it thickens slightly. Remove from heat and set aside. Place the flatbreads on a baking sheet lined with parchment paper. Brush each flatbread with olive oil. Evenly distribute the vegan feta cheese crumbles over the flatbreads.
