Gluten-Free, Vegan, Serves 4
- 2 avocados cubbed
- 1 english cucumber cubbed
- 1/2 cup dill chopped
- 1 cup vegan feta
- 3 Tbsp avocado oil
- 1 lemon zested and juiced
- salt and pepper to taste
Directions:
Combine all ingredients into a bowl and toss lightly. You can either serve the salad on the side or in lettuce cups either way it is light and refreshing and great to enjoy on a hot day.
