Gluten-Free, Vegan, Serves 6
- 1 pound buffalo cauliflower wings cooked
- 6 cups salad greens
- 4 carrots chopped
- 2 Persian cucumbers chopped
- 4 celery stalks chopped
- 1/2 cup cilantro chopped
- 4 radishes thinly sliced
- 1 avocado sliced
- 1/2 cup vegan feta cheese
Goddess Dressing:
- 1/2 cup coconut greek yogurt
- 1/4 cup olive oil
- 1 cup fresh cilantro
- 1/2 cup fresh basil
- 1 jalapeno halved and seeded
- juice of 1 lemon
Directions:
In a large bowl, combine greens, carrots, cucumber, celery, cilantro, radishes, and buffalo wings. Prepare the dressing by blending all the ingredients until smooth. Toss the salad and top with the feta and avocado. Serve with the dressing on the side or toss the salad in the dressing prior to adding the cheese and avocado.
