Ingredients:
For the cake:
- 2 cups gluten-free flour blend
- 1 cup coconut sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup canned coconut milk
- 1/2 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 2 tablespoons lime zest
- 2 tablespoons lime juice
- 1 teaspoon vanilla extract
For the glaze:
- 1 cup powdered sugar
- 2-3 tablespoons lime juice
- 1 tablespoon lime zest
- Shredded coconut and lime slices
Directions:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with coconut oil or line it with parchment paper. Whisk together the gluten-free flour blend, coconut sugar, baking powder, baking soda, and salt in a large mixing bowl. Combine the canned coconut milk, unsweetened applesauce, melted coconut oil, lime zest, lime juice, and vanilla extract in another bowl. Mix until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Pour the batter into the prepared baking dish and spread it out evenly with a spatula.
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. While the cake is baking, prepare the glaze. Whisk together the powdered sugar, lime juice, and zest in a small bowl until smooth. Adjust the consistency by adding more lime juice if needed. Once the cake is done baking, remove it from the oven and let it cool completely in the baking dish. Once cooled, drizzle the lime glaze evenly over the top of the cake.
