Gluten-Free, Vegan, Serves 8
Ingredients:
For the Chickpea Burgers:
- 2 cans (15 ounces each) chickpeas, rinsed
- 1/2 cup gluten-free rolled oats
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tablespoon ground flaxseed meal
- 3 tablespoons water
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, for cooking
For Serving:
- Gluten-free burger buns
- Sliced avocado
- Tomato slices
- Red onion slices
- Lettuce or spinach leaves
- Your favorite condiments
Directions:
In a small bowl, mix together the ground flaxseed meal and water. Let it thicken for 5-10 minutes and form a gel-like consistency. This will act as a binder for the burgers. In a food processor, pulse the drained and rinsed chickpeas until they are coarsely mashed but still have some texture. Transfer the mashed chickpeas to a large mixing bowl. Add the gluten-free rolled oats, chopped red onion, minced garlic, chopped parsley, flaxseed egg, ground cumin, paprika, turmeric, salt, and black pepper. Mix until well combined.
Divide the mixture into 8 equal portions and shape each portion into a burger patty. Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the chickpea burger patties to the skillet. Cook for 4-5 minutes on each side or until golden brown and crispy. If using burger buns, lightly toast them. Place a chickpea burger patty on the bottom half of each burger bun. Top with sliced avocado, tomato slices, red onion slices, and lettuce or spinach leaves. Add your favorite condiments on top. Place the top half of the burger bun on top.
