Ingredients:
Gluten-Free, Vegan, Serves 3
- 1 avocado
- 5 cups cauliflower florets
- 1/4 cup cilantro chopped
- 1/2 tsp garlic powder
- 1 jalapeno
- 1/2 cup cherry tomatoes halved
- 1/4 cup red onion
- 1/3 cup refried beans
- 1/2 tsp ground cumin
- 1 Tbsp avocado oil
- 1/2 tsp paprika
- 1/4 tsp chili powder
- 1 cup Vegan cheddar cheese
- 1/4 cup Vegan sour cream
- 1/2 cup salsa
Directions:
Toss the florets in oil, cumin, paprika, garlic, salt, and pepper to taste. Once tossed, air-fry for 15-20 minutes. The goal is to crisp up the cauliflower before adding the cheese. While the cauliflower cooks, heat the beans. Once the cauliflower is crisp, layer the nachos: beans, a thin layer of cheese, cauliflower, onions, tomatoes, jalapeno, and the remaining cheese. Bake until the cheese is melted. Once melted, remove and top with salsa, sour cream, avocado, and cilantro. Enjoy!
