Ingredients:
For the spinach ravioli filling:
- 2 cups fresh spinach leaves, chopped
- 1 cup fresh basil leaves, chopped
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
For assembling:
- 24 gluten-free vegan ravioli wrappers
For serving:
- Vegan Parmesan cheese
- Fresh basil leaves, for garnish
Directions:
In a large skillet, heat olive oil over medium heat. Add minced garlic, red pepper flakes, and sauté for 1-2 minutes until fragrant. Add chopped spinach and cook until wilted, about 2-3 minutes. Stir in chopped basil leaves and cherry tomatoes. Cook for an additional 2-3 minutes until the tomatoes are softened. Season with salt and pepper to taste. Remove the skillet from heat and let the filling mixture cool slightly. While the filling cools, prepare the ravioli wrappers according to the package instructions, or if making homemade, roll out the dough and cut into squares.
