Ingredients:

  • 1 cup Medjool dates, pitted
  • 1 cup raw almonds
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons almond butter
  • 2 tablespoons ground flaxseed
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 2-3 tablespoons unsweetened shredded coconut

Directions:

Place the pitted Medjool dates in a bowl and cover them with hot water. Let them soak for about 10 minutes to soften. Add the raw almonds to a food processor and pulse until finely ground into a coarse flour-like consistency. Drain the soaked dates and add them to the food processor along with the ground almonds, unsweetened cocoa powder, almond butter, ground flaxseed, maple syrup, vanilla extract, and a pinch of sea salt. Process the mixture until it forms a thick, sticky dough.

If the mixture seems too dry, you can add a tablespoon of water to help it come together. Roll the dough into small truffle-sized balls about 1 inch in diameter using your hands. Roll the truffles in unsweetened shredded coconut for extra flavor and texture if desired. Place the truffles on a plate or baking sheet lined with parchment paper and refrigerate them for at least 30 minutes to firm up.
