Gluten-Free, Vegan, Serves 4
- 1 pound bitter melon sliced
- 1/2 tsp chili pepper flakes
- 1 Tbsp minced garlic
- 2 Tbsp Sesame Oil
- 1 Tbsp Rice Wine Vinegar
- 2 Tbsp Coconut Amino
- 1/2 tsp Coconut Sugar
- 2 medium Carrots cubed
- 1 Shallot minced
- 1/2 red cabbage shredded
- 1 broccoli stalk cubed
- 2 cloves garlic minced
Directions:
Into a large skillet heat oil, garlic, and shallots. Once fragrant, saute carrots, melon, and broccoli stalk. Add in seasonings and saute for 3-5 minutes or until tender. Lastly, add cabbage and cook for another 1-2 minutes. Serve over rice.
