Gluten-Free, Vegan, Serves 9
- 3 bell peppers
- 1 pound vegan ground meat
- 1/2 tsp black pepper
- 1 tsp chili powder
- 1/4 tsp sea salt
- 1 tsp cumin
- 3/4 cup salsa
- 1 cup vegan cheese
- 3/4 cup vegan sour cream
- 1 avocado
- 1/4 cup sliced olives
Directions:
Remove seeds, core, and membrane from the bell peppers then slice them into vertical pieces where they dip down. Set bell peppers aside. Cook ground meat and drain any excess fat. Preheat the oven to 375 degrees F. Combine meat with salsa and evenly into the bell pepper boats. Top with cheese and bake with foil or parchment underneath for 10 minutes or until the cheese has melted. Top with sour cream, avocado, and olives.
