  • 4 medium potatoes, peeled and thinly sliced
  • 1 large onion, thinly sliced
  • 6 tablespoons olive oil
  • 1 red bell pepper, thinly sliced
  • 8-10 cherry tomatoes, halved
  • 6-8 large eggs
  • Salt and pepper to taste
  • Fresh parsley, chopped

Directions:

Heat 4 tablespoons of olive oil in a large, non-stick skillet over medium heat. Add the sliced potatoes and cook until they are tender, stirring occasionally, about 10-12 minutes.
