Ingredients:

Gluten-Free, Vegan, Serves 12

For the buns dough:

  • 2 cups gluten-free all-purpose flour
  • 1 packet (7g) instant yeast
  • 1/4 cup coconut sugar
  • 1/2 teaspoon salt
  • 1/4 cup melted coconut oil
  • 1/2 teaspoon ground saffron
  • 3/4 cup unsweetened almond milk, warmed
  • 1 teaspoon vanilla extract

For the filling:

  • 1/4 cup coconut sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons melted coconut oil

For the glaze:

  • 1/4 cup powdered sugar
  • 1-2 tablespoons unsweetened almond milk

Directions:

Combine the gluten-free flour, instant yeast, coconut sugar, salt, and ground saffron in a large mixing bowl. Add the melted coconut oil, warmed almond milk, and vanilla extract to the dry ingredients. Mix until a dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes or until smooth and elastic. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

While the dough rises, prepare the filling by mixing the coconut sugar, ground cinnamon, and melted coconut oil in a small bowl.
