Ingredients:

Gluten-Free, Vegan, Serves 12

For the baked oatmeal bars:

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup unsweetened almond milk
  • 1/4 cup maple syrup
  • 2 tablespoons ground flaxseed mixed with 6 tablespoons water (flaxseed egg)
  • 1 cup diced strawberries

For the vanilla cream cheese frosting:

  • 1/2 cup vegan cream cheese, softened
  • 2 tablespoons maple syrup
