Ingredients:

Gluten-Free, Dairy-Free, Serves 6

For the fig mocktail:

  • 6 ripe figs, stemmed, quartered
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves
  • 2 cups coconut water
  • Ice cubes

For the sugar rim:

  • 2 tablespoons coconut sugar
  • 1 tablespoon water

For garnish:

  • Fresh thyme sprigs
  • Slices of fresh figs

Directions:

Mix the coconut sugar and water in a shallow dish until well combined. Dip the rims of 6 glasses into the sugar mixture to coat them evenly. Set aside. Combine the quartered figs, fresh thyme leaves, and honey in a small saucepan. Cook over medium heat, stirring occasionally, until the figs soften and release their juices, about 5-7 minutes. Remove from heat and let cool slightly.

Once cooled, transfer the fig mixture to a blender or food processor. Blend until smooth and well combined. Divide the fig puree evenly among the sugar-rimmed glasses. Fill each glass with sparkling water or soda water until almost full. Stir gently to combine. Add ice cubes to each glass, if desired. Garnish each mocktail with fresh thyme sprigs and slices of fresh figs.
