Ingredients:

Gluten-Free, Dairy-Free, Serves 6

  • 1 lb boneless, skinless chicken breasts, cubed
  • 14 oz can diced tomatoes, drained
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil, divided
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 cups low-sodium chicken
  • 1 green bell pepper, diced
  • Salt and pepper, to taste
  • 1 cup long-grain white rice
  • Fresh parsley, chopped, for garnish

Directions:

Preheat your oven to 375°F (190°C). In a medium bowl, toss the chicken pieces with the Cajun seasoning until evenly coated. Heat one tablespoon of olive oil in a large oven-safe skillet or casserole dish over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5-6 minutes.
