Ingredients:

Gluten-Free, Vegan, Serves 12

  • 1 cup mixed nuts
  • 1/2 cup dried figs, chopped
  • 1 teaspoon ground cinnamon
  • 1/2 cup dried apricots, chopped
  • 1/4 teaspoon ground cloves
  • 1/2 cup gluten-free flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground black pepper
  • 1/2 cup dried cranberries
  • Zest of 1 lemon
  • 1/2 cup maple syrup
  • 1/4 cup brown rice syrup
  • Zest of 1 orange
  • 1/4 cup coconut oil
  • Cocoa Powder, for dusting

Directions:

Preheat your oven to 325°F (160°C) and line an 8-inch (20 cm) round cake pan with parchment paper. Combine the chopped nuts, dried figs, dried apricots, and dried cranberries in a large mixing bowl. In a separate bowl, whisk together the gluten-free flour, cocoa powder, ground cinnamon, ground nutmeg, ground cloves, ground black pepper, orange zest, and lemon zest.

In a small saucepan, heat the maple syrup, brown rice syrup, and coconut oil over medium heat until the coconut oil is melted. Stir to combine. Pour the syrup mixture over the dry ingredients in the large mixing bowl. Mix everything together until well combined and the dry ingredients are evenly coated with the syrup mixture. Transfer the mixture to the prepared cake pan and press it down firmly and evenly using a spatula or your hands.

Bake in the preheated oven for 25-30 minutes or until the edges are slightly firm and the top is set. Remove from the oven and let the panforte cool completely in the pan. Once cooled, remove it from the pan and transfer it to a cutting board. Using a sharp knife, cut the panforte into wedges or squares.
