Ingredients:

Gluten-Free, Vegan, Serves 6

  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground coriander
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • Juice of 1 lemon
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 large tomato, chopped
  • Fresh cilantro for garnish
  • 1 cup spinach, chopped

Directions:

In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened about 5 minutes. Add the minced garlic and grated ginger to the pot, and cook for an additional 1-2 minutes until fragrant.
