Ingredients:

Gluten-Free, Vegan, Serves 6

  • 1 large head cauliflower, chopped into florets
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 4 cups vegetable broth
  • 1 cup unsweetened almond milk
  • 1/4 cup nutritional yeast
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh chives or parsley, for garnish

Directions:

In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent for about 5 minutes. Add the cauliflower florets to the pot and sauté for another 2-3 minutes. Pour in the vegetable broth, and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the cauliflower is fork-tender.
