Ingredients:
For the crust:
- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 2 tablespoons maple syrup
- Pinch of salt
For the chocolate cream cheese filling:
- 1 cup raw cashews, soaked for 1 hour
- 1/4 cup coconut cream
- 2 tablespoons coconut oil, melted
- 2 tablespoons cocoa powder
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
For the topping:
- 1 cup fresh blueberries
Directions:
Preheat your oven to 350°F (175°C). Grease a 12-cup mini muffin tin with coconut oil or line it with mini muffin liners. Combine the almond flour, melted coconut oil, maple syrup, and a pinch of salt in a mixing bowl. Mix until well combined and the mixture resembles wet sand. Divide the crust mixture evenly among the 12 muffin cups. Press the mixture firmly into the bottom and up the sides of each cup to form tartlet shells. Bake the crusts in the preheated oven for 10-12 minutes or until lightly golden brown. Remove from the oven and let cool completely.
While the crusts are cooling, prepare the chocolate cream cheese filling.
