Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 pound boneless, skinless chicken breasts, diced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 (15-ounce) can black beans, drained, rinsed
  • 1 (15-ounce) can kidney beans, drained, rinsed
  • 1 (15-ounce) can diced tomatoes
  • 1 cup frozen corn kernels
  • 2 cups vegetable broth
  • Chopped fresh cilantro, for garnish
  • Sliced avocado, for serving

Directions:

Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until softened about 5 minutes. Add the minced garlic and diced bell pepper, and cook for an additional 2 minutes.
