Ingredients:
For the base:
- 1 cup almonds
- 1 cup pitted dates
- 2 tablespoons cocoa powder
- 1 tablespoon instant coffee powder
- Pinch of salt
For the fudge layer:
- 1 cup raw cashews, soaked overnight
- 1/4 cup coconut oil, melted
- 1/4 cup agave syrup
- 2 tablespoons cocoa powder
- 1 tablespoon instant coffee powder
- 1 teaspoon vanilla extract
- Pinch of salt
Directions:
Line a 9×9-inch square baking dish with parchment paper, leaving some overhang on the sides for easy removal later. Combine the almonds, pitted dates, cocoa powder, instant coffee powder, and a pinch of salt in a food processor. Pulse until the mixture comes together and forms a sticky dough. Press the mixture evenly into the bottom of the prepared baking dish to form the base layer. Place it in the freezer while you prepare the fudge layer. Drain the soaked cashews and rinse them under cold water. Place them in a blender with melted coconut oil, agave syrup, cocoa powder, instant coffee powder, vanilla extract, and a pinch of salt. Blend until smooth and creamy, scraping down the sides as needed.
Remove the baking dish from the freezer and pour the fudge mixture over the base layer. Use a spatula to spread it out evenly. Return the baking dish to the freezer and chill for at least 2 hours or until the fudge layer is set. Once set, remove the Raw Coffee Fudge Bars from the freezer and lift them out of the dish using the parchment paper. Place them on a cutting board and cut into bars or squares. Serve immediately, or store the bars in an airtight container in the refrigerator for up to a week or in the freezer for longer storage.
