Ingredients:

For the salad:

  • 6 cups arugula
  • 1 large avocado, diced
  • 1 cucumber, thinly sliced
  • 1/4 cup sliced almonds
  • Salt and pepper to taste

For the creamy dressing:

  • 1/2 cup unsweetened vegan yogurt
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon chopped fresh dill
  • 1 clove garlic, minced
  • Salt and pepper to taste

Directions:

Combine the arugula, diced avocado, and sliced cucumber in a large salad bowl. Toss gently to combine.
