Gluten-Free, Dairy-Free, Serves 4

Ingredients:

For the turkey meatballs:

  • 1 lb ground turkey
  • 1/4 cup gluten-free breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

For the marinara sauce:

  • 1 (14 oz) can crushed tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

For assembling:

  • Gluten-free sub rolls
  • Dairy-free cheese slices
  • Fresh basil leaves, chopped

Directions:

Preheat the oven to 375°F (190°C). Combine the ground turkey, gluten-free breadcrumbs, chopped onion, minced garlic, dried oregano, dried basil, salt, and pepper in a large mixing bowl. Mix until well combined. Shape the turkey mixture into meatballs about 1 inch in diameter. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. While the meatballs are cooking, prepare the marinara sauce. Combine the crushed tomatoes, minced garlic, dried oregano, dried basil, salt, and pepper in a small saucepan.

Bring to a simmer and cook for 5-7 minutes, until slightly thickened. Once the meatballs are browned, transfer them to a baking dish. Pour the marinara sauce over the meatballs, ensuring they are coated evenly. Bake in the preheated oven for 15-20 minutes until the meatballs are cooked through. While the meatballs are baking, prepare the gluten-free sub rolls according to the package instructions. Once the meatballs are done, remove them from the oven. Slice the gluten-free sub rolls in half lengthwise and place a few meatballs on each roll. If desired, top the meatballs with dairy-free cheese slices.
