Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 8 ounces (225g) vegan sausage, sliced
- 1 cup dried green or brown lentils, rinsed
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 2 cups water
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley, chopped
Directions:
Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until softened about 5 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant. Add the diced carrots, celery, and bell pepper to the pot. Cook for 5 minutes, stirring occasionally. Add the sliced vegan sausage to the pot and cook for another 3-4 minutes until slightly browned.
