Ingredients:
For the raw brownie base:
- 1 cup raw almonds
- 1 cup Medjool dates, pitted
- 3 tablespoons raw cacao powder
- Pinch of salt
For the raw marshmallow layer:
- 1 cup raw cashews, soaked overnight
- 1/4 cup coconut cream
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
For the chocolate drizzle:
- 1/4 cup vegan chocolate chips
- 1 teaspoon coconut oil
For the topping:
- Vegan marshmallows, cut into small pieces
- Vegan chocolate chips
Directions:
Prepare an 8×8 inch baking dish by lining it with parchment paper, leaving some overhang on the sides for easy removal later. Place the raw almonds in a food processor to make the brownie base and process until finely ground. Add the pitted dates, raw cacao powder, and a pinch of salt. Process until the mixture sticks together when pressed between your fingers. Press the brownie mixture evenly into the bottom of the prepared baking dish. Place it in the refrigerator while you prepare the marshmallow layer. To make the marshmallow layer, drain and rinse the soaked cashews. Combine the soaked cashews, coconut cream, maple syrup, vanilla extract, and a pinch of salt in a blender. Blend until smooth and creamy.
Spread the marshmallow layer evenly over the brownie base in the baking dish. Return the dish to the refrigerator and chill for at least 1 hour to set. Once the marshmallow layer has set, prepare the chocolate drizzle by melting the vegan chocolate chips and coconut oil together in a small saucepan over low heat or the microwave in 30-second intervals, stirring until smooth. Drizzle the melted chocolate over the top of the marshmallow layer. Quickly sprinkle the chopped vegan marshmallows and chocolate chips over the chocolate drizzle. Return the dish to the refrigerator and chill for an additional 30 minutes to allow the chocolate drizzle to set. Once fully set, use the parchment paper overhang to lift the brownies from the baking dish. Cut into squares and serve.
