Ingredients:
For the salad:
- 1 lb (450g) salmon fillets
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 cups mixed salad greens
- 1 cucumber, thinly sliced
- 1 avocado, diced
- 1 cup radishes, thinly sliced
- 1 orange, segmented
- 1 grapefruit, segmented
For the dressing:
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh lime juice
- 1 teaspoon honey
- Salt and pepper, to taste
Directions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Bake the salmon in the preheated oven for 12-15 minutes or until cooked through and flaky. Remove from the oven and let it cool slightly.
