For the Orange Ginger Glazed Salmon:
- 6 salmon fillets
- 2 cloves garlic, minced
- 1/4 cup freshly squeezed orange juice
- 2 tablespoons coconut aminos
- 1 tablespoon grated fresh ginger
- 2 tablespoons pure maple syrup
- Salt and pepper, to taste
- Chopped fresh cilantro, for garnish
For the Mango Salsa:
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 small red bell pepper, diced
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Salt and pepper, to taste
For assembling the Rice Bowl:
- Cooked brown rice or quinoa
- Mixed greens or spinach
- Sliced avocado, for garnish
Directions:
In a bowl, whisk together the freshly squeezed orange juice, coconut amino, grated ginger, minced garlic, and pure maple syrup. Place the salmon fillets in a shallow dish and pour the marinade over them. Allow them to marinate for about 15-20 minutes. Preheat a grill or grill pan over medium-high heat. Brush the grates with a little oil to prevent sticking. Remove the salmon fillets from the marinade and season with salt and pepper.
