For the spicy honey garlic shrimp:

Gluten-Free, Dairy-Free, Serves 4

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons coconut amino
  • 1 teaspoon red pepper flakes
  • 2 tablespoons maple syrup or agave nectar
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Fresh cilantro or parsley, chopped

For the coconut rice:

  • 1 cup jasmine rice
  • 8oz canned coconut milk (full-fat)
  • 1 cup water
  • 1/2 teaspoon salt

Directions:

Combine the jasmine rice, canned coconut milk, water, and salt in a medium saucepan. Bring the mixture to a boil over medium-high heat.
